Ingredients

  • 2 Bananas
  • 2 Eggs
  • 1 Cup Creamy Peanut Butter
  • 1 tbsp Honey
  • 1 tbsp Vanilla
  • 1/2 tsp Baking Soda

Instructions

Prepare the Batter:

  • Mash the bananas in a large mixing bowl.
  • Add peanut butter, eggs, and baking soda to the bowl.
  • Mix everything together thoroughly using a stick blender or hand mixer until smooth and well combined.

Add the Mix-Ins:

  • Stir in the chocolate chips, butterscotch chips, white chocolate, or any other mix-ins of your choice.
  • Feel free to increase the quantity of chips for extra indulgence—no judgment here. 😏

Prep the Muffin Tin:

  • Grease the muffin tin generously with olive oil. Pray that your muffins will come out easily when done!

Bake:

  • Preheat your oven to 375°F (190°C).
  • Scoop the batter into the greased muffin tin, filling each cup about ¾ full.
  • Bake for 12-15 minutes, or until the tops are lightly golden.

Check for Doneness:

  • Insert a toothpick into the center of a muffin. If it comes out clean or with a few crumbs, they’re ready. If it’s runny, bake for another 2-3 minutes and check again.

Optional Tip:

  • They say to add a teaspoon of maple syrup to the batter, but honestly, they’re delicious without it. 🤷🏼‍♀️

Cool and Enjoy:

  • Let the muffins cool in the tin for a few minutes before carefully removing them.
